What’s better than Christmas Shopping?

Well…For some you, you may absolutely hate it. My mum were going to go Christmas Shopping together this weekend.

Well, instead my Mum decided, instead of shopping. Too bring my Gran down from her home, to spend the day cooking with us, too make her famous shortbread for Christmas! Whether or not she’ll remember her recipe, is another question…But it’s kind of not the point. Like, I think it’s a much better idea than Christmas Shopping. She’ll forget and as soon as she gets back to her home, shell probably ring my Mum or Aunt 10 minutes later.

But not everything is about her, haha.

What was or is your favorite cartoon?

I would have to go with the classic that “The Simpsons” Even know I get so happy watching it. I believe there is a Simpson quote for everything…FOR EVERYTHING! Even now even though they are running out of ideas, I still am loving most of the newer episode.  Any show that runs for over 20 years you are always going to have a miss type episode. I personally HATE the Australian episode too…It was just so stupid!lol

Which cooking utensil (other than the usual pots and pans etc) would you miss the most?

Oh wow, I had never thought about that before! I honestly think that I would miss having spoons. They are just so handy! They may not cut very well, but they can usually still do it. A lot of the time I use spoons to scoop things. It’d be a lot harder with a fork or a knife!

Would you dare to sleep in haunted house overnight?

I actually kind of have once, but I was with other people. I once spent a weekend at a supposed “haunted house” and we played a murder mystery over the weekend. It was so much fun! Personally I didn’t feel anything, but apparently others did.

My partner…Once or twice a year I just get really unhappy, everything that’s bothered…Even if it was a couple of months ago, gets on top of me. Even if I’ve dealt with, I just like to have a good cry. This week a lot happened at once.

  1. Do you believe in love at first sight?
    I do, but I also don’t believe that we’ve realised that it’s happened, if that makes any sense. I think about my current partner and my previous partners and those first time I met them. I believe there is some kind of of connection when you “a one” and also “the one”. Something happens, whether it’s hormones, destiny, something happens in those first moment, that we are not even aware of.
  2. Your first car?
    I haven’t actually even learned to drive yet, one day though. My dream car would be a Mini though!
  3. Who taught you to ride a bike? How did it go?
    My Dad really was the one who taught us, he bought us bikes and he kind of “made us” do it. Which sounds tough, but we would have never have done it if he hadn’t of made us. The bike he got me though, I think was a bit too big or tall for me. I can’t remember which way it’s called, but it was hard for me to get my leg over.
  4. Ugly and rich or beautiful and poor?
    I would honestly have to go with Ugly and rich. I’m not trying be all holier than though. I really believe at the end of the day your friends, family and love relationships, the ones who care about you anyways, will still be around for you. At least though if I was rich, I would be able to travel and explore new cultures, new lands.
  5. What was the first dish you could cook?
    I think I baked before I started to make dishes for dinner and such. I used to love making cookies, I just loved the smell. As for dinner, I think the first dish I could cook was tuna mornay, I love that dish, one of the reasons that I made it.

So I had two pieces of really most excellent news…Oh yeah, I went there…I said “excellent”…Well one is “news” that I received and the other is something I cannot believe that I’ve forgotten to mention!

The first piece of good news is, there is a society in Australia called “Guide Dogs Australia” which to be honest I thought they only helped raised dogs for the blind. I sponsor one of their dogs from the Guide Dogs and you get updates, quarterly during the year. I received my most recent update and my dog is going to be a Autism Assistance dog (which I am extremely proud of). I have a lot of people in my life whose children suffer from Autism, so this was something that I was excited to share with them.

The other piece of news (that I cannot believe I forgot to share) is that my cousin is on Australia’s “Great Australian Bake Off”. I am so proud of him! It’s quiet funny really, the ladies in my family we’re not huge cookers, but all the guys are so creative and good at cooking. It is really funny watching a family member on television and not being able to breathe when something goes wrong for them. They’ve only had two shows so far, but he is still on there! =D

I made a thing! A Jelly thing =D

This year I have been really getting into cooking, I may have mentioned somewhere in a previous Blog. I can cook to “survive” but I’ve never really gotten into cooking. It’s interesting really pretty much all of the women in my family can cook, we can cook to live, but all the men in my family, they are the ones that are the creative in the kitchen.

I had seen this “glass jelly cake” all over my Facebook page and I just thought that it looked really good and it looked really easy to make. So I decided to make it.

The usual name for this “cake” is either called a “Rainbow Jelly/O Cake” or “Stained Glass Cake”.

So here are the steps (I swear that this is SO easy to make):

Step 1: Choose your flavours (I pretty much just picked any that looked good at the time, you can choose whatever you want…I am going to be getting green and red and make a Christmas one).

Step 2: Place the jelly crystals into containers (use a different container for each colour, remembering that the length and shape of the container will determine how big the jelly squares will be)

Step 3: Boil one (1) cup of water (most jelly packets will tell you to use two (2)cups, do not follow packet directions). The jelly squares will be more sturdy.

Step 4: Pour the boiling *be careful* water into the containers, stir the jelly crystals until the crystals dissolve.

Step 5: Once the crystals have dissolve place the containers into the fridge and wait a few hours.

Step 6: Once you have waited a few hours, take containers out and either:

a) Cut the jelly into squares while in the containers and then placed them into a bowl/tray/case, or
b) Place Jelly into warm water for a FEW seconds and then, in one of the corners, wait for an air pocket and then it should fall out.

Step 7: Cut up all the jelly squares and mix them up, so all colours are mixed up together evenly (this was the hardest part of the whole thing! The jelly will stick to your fingers!)

Step 8: Fill 1/2 a cup with cold water and place two packet of clear and unflavoured gelatin in until the gelatin has “bloomed”.

Step 9: Pour into the same bowl, 1 and 1/2 cups of boiling water and one can of sweetened condensed milk…Stir it all together and wait for it to cool.

Step 10: Once the mixture has cooled down, then pour the mixture over the jelly squares

*Be careful of the tin that you use! I used one and didn’t realise that it was going to leak everywhere…After I took this photo I had to swap tins*

Step 11: Place back into fridge and wait for a few hours (most people suggest overnight)

Just so you know, it will be really sweet, but really light…Very refreshing! Great for a treat when it’s warm!

I made a thing =D

We have just started Spring here in the land down under and this week in particular has been a scorcher! Also this year I have been getting more into cooking and such. I mean I’ve always been able to cook to survive type thing, but I am not a big lover of the kitchen!

However this year when I have gotten something stuck in my head to make, it usually has been staying in there until I either focus on something else (which guaranteed for me is pretty easy), or I make it. Since it’s been SO hot this weekend, I have literally been draining, I decided to make something I can never seem to find in my local supermarkets…Pink Lemonade

This was probably the best recipe that I found and it was really simple to make as well….Old Fashioned Pink Lemonade…The only thing is I used mostly lemon juice from a bottle (bad me, I know)…Otherwise be prepared to use and squeeze a LOT of lemons…I am not exaggerating, I mean a lot! It was really sweet and quite refreshing though, I highly recommend it

What made you feel good this week?

I suggest you all wander over to Pete’s Pond, when you see a baby elephant rolling around in the mud and water for the first time. It just warms the heart, I could watch it all day … I’m not kidding, I actually use Pete’s Pond and Djuma Cam as a form of “mediation”, it’s fantastic!

For potlucks or parties do you cook it yourself, buy from a grocery store, or pay for catering?

I’m not really a “cook” person. It;s funny really because it’s actually the guys in my family who LOVE to cook. They are always cooking and creating things, whereas I cook mainly to survive. Although sometimes I do love to create but it’s so rare and doesn’t happen to often. However I do try to “create” drinks for parties. Sometimes I’ll do all three!

What is your favorite part of the town/city you live in.  And what Country do you live?

There are so many little hidden treasures in Adelaide, even though Adelaide is comparatively small compared to cities like Sydney and Melbourne, but we have lots of “secret spots”. My favourite place to go though is “Victor Harbor” especially during the Spring and Summer time. It’s this little beach town, when the weather is right, it is perfect! I live in Australia.

30 Days of Gratitude…Self Gratitude

Before I was going to write individually on each of these last few days what I was grateful for, but it’s been such a crazy week that I have decided to leave these last few days and write what I’m most grateful in one big go…So here I go…

Self Gratitude 

I have decided that I NEED to change my life. After months of going back and forth with my last ex, I realised I didn’t trust him any-more, especially not the way that I did once. I have to take my ownership in that. I don’t think that he was a bad person, but I needed to be more sensible in the choice that I was making. I needed to ask him hard questions before we started dating. Which started making me think about all of my past relationships and question why they have thought it was alright to treat me the way they did, when they don’t do it to anyone else? What made them look into the eyes of someone they were supposed to have loved and cared about and go “You’re going to get hurt by this and I don’t care”?

I have decided that I am too hard on myself. I trip myself up by worrying to much about how everyone else is feeling and doing and then I end up putting myself on the back burner. So then I don’t achieve all the things that I needed to, to get anywhere in this life. This includes family, friends, everything aspect of my life. Even if my family don’t think I cook, when I cook a lot (sorry I don’t put everything I make on Facebook *rolls eyes*) Doesn’t mean I have to stop cooking things I enjoy cooking.

I think that the hardest thing in this life is to be grateful for yourself. Its you who gets you through those tough days ultimately. Your mind, your body, your spirit. Its yourself who chooses to step up and take care of yourself.

Food…Yum Yum in the Tum Tum!

Food! Food Glorious Food! I have really enjoyed baking and cooking over the last few years (although if you asked my family they would tell you I don’t even know how to turn on the oven to begin with…I lived in America on and off for three years, what did they think I used to do? Order take out every night?) America is actually the place where I learnt to cook and I love them for that!

Apart from Pasta though I don’t really enjoy cooking dinner food persay. I LOVE to bake though! I love baking cookies and cakes and cupcakes. I love creating desserts. One thing I have never really been into “cooking” though was dips. I just never really even thought about creating my own dips before.

That is until now…

I went to a barbecue last weekend and I found the most amazing dip I have ever come across before! A corn relish dip! I spent the time eating the dip rather than the meat and the salads. So today I am attempting to make it today. Here is the recipe:

  • 250 gms corn relish
  • 220 gms cream cheese

Mix until well blended.

Simple right? The great thing about this recipe is that you can mix it up and change it around so you can add your own tastes…It is amazing!
